Ingredients
Sugar (1 1/2 cups)
Medium tart apple (1)
Tart Cherries (1 cup), dried
Small red onion (1), thinly chopped
Apple cider vinegar (1 cup)
Instructions
Leave the skin on the apple and take the core off before peeling and chopping it into thin strips.
Combine the apples, cherries, onions, vinegar, and sugar in a wide saucepan. Cook, vigorously, whisking until the dugar has melted and the mixture has started to simmer.
Cook, covered, over low heat for 8-10 minutes of until the onions are soft and the dry chrries are plump.
Remove the cap and lift the heat to maximum, then proceed to cook for another 5 minutes, or until the syrup has reduced to a glossy glaze around the berries. Chutney may be consumed right away, or stored in a sealed container in the refriderator.
