Ingredients
Tomatoes (8 quarts), peeled, cored, finely chopped
Garlic cloves (2), crushed
Onions (5 cups), chopped
Sugar (1 tbsp)
Oregano leaves (2 tbsp)
Cilantro leaves (1 cup)
Cumin (1 tsp), ground
Jalapeno peppers (4), seeded and chopped
Green chilies (4 long), seeded and chopped
Vinegar or lemon juice (2 1/2 cups)
Pepper (1 tbsp)
Instructions
Mix all the ingredients in a saucepan.
Carry to a simmer, then reduce to low heat and proceed to cook for 20 minutes.
Proceed to mix for about an hour, or until the sauce thickens.
Pour the spicy salsa halfway into pint jars, leaving 1/2 inch of headspace.
Cover it with canning lids.
Using a jar lifter, place the jars in a pot of boiling water for around 20 minutes.
Bring a pot of water to a boil.
Remove them from the boiling pot.
