Poppy Seed Dressing

Preparation time:  15 minuts
Servings:  2 cups

Ingredients
Apple cider or red wine vinegar (1/2 cup)
Honey (1/3 cup)
Lemon juice (1/4 cup), freshly squeezed
Dijon mustard (1 tbsp)
Olive oil (1 cup)
Small sweet onion (1/2), minced
Poppy seeds (2 tbsp)

Instructions
Mix the vinegar, honey, lemon juice, and mustard in a small bowl.  Whisk in the oil, onion, and poppy seeds.  Store the dressing in a sealed glass container in the refrigerator for up to 2 weeks.
