Cornbread Dressing

Preparation time:  1 hour and 5 minutes
Cooking time:  30 minutes
Servings:  15

Ingredients for Cornbread
Plain cornmeal (2 cups)
All-purpose flour (1 1/2 cups)
Sugar (1/4 cup)
Baking powder (1/2 tsp)
Water (2 1/2 cups)
Egg (1)
Vegetable oil (2 tbsp)

Ingredients for Dressing
Chicken part and giblets (2 cups)
Water (4 cups)
Onion (1/2 cup), chopped
Green peppers (1/2 cup), chopped
Black pepper (1 tsp)
Poultry seasoning (1 tsp)
Sage (1 tsp)

Instructions for Cornbread
Preheat oven to 410F
Combine the sugar, flour, cornmeal, and baking powder in mixing bowl.
Add the water, egg, and oil and beat together to form a smooth dough.
Place it on a greased 9"x9" square baking dish.
Bake unitl the colour changes to a golden-brown.
Set aside to cool.

Dressing Recommendations
Put the chicken parts and giblets in a big pot of boiling water after washing them.
Combine the celery, green pepper, onion, and black pepper in a separate pot with water and bring to boil.
Simmer for 30 minutes, or until vegetables are soft.
Set aside two cups.
Drain the meat once it is cooked, and allow it to cool.
Remove the meat from the bone and whisk together the  remaining dressing components.
Add all components with two cups of chicken broth to keep the mixture moist.
Spread the mixture onto the baking sheet to bake.
Bake until golden brown at 410F
