Citrus Relish

Citrus Relish

Preparation time:  30 minutes
Cooking time:  5-10 minutes
Servings:  8-12

Ingredients
White vinegar (1/4 cup)
Sugar (2-4 tbsp)
Small lemon, kumquats, or limes (1lb)
Small oranges (1lb
Glass jars
Mustard seed (1/4 cup)

Instructions
Pickled Fruit:  At the end of each fruit's stem, create a cross.
Place them in glass jars and cover them with venegar.
Apply 2 tsp of mustard seed to each jar.  Cover with lids.
Allow it to stay at room temperature for around a month before making the relish and aserving it.

Citrus Relish:  Mix the fruit and sugar in a small frying pan, adjust the sweetness as required.
Shake the pan often over medium heat for 5-10 minutes, or before the mixture cooks and the fruit becomes glossy and translucent.
It may be eaton hot or cold.
Use remaining pickling vinegar in salad dressings or to marinate chicken or fish.
