Ingredients
Soy cream (8 oz), (like silken tofu)
Cucumber (1)
Onion (1 tsp)
Mayonnaise (1 tbsp)
Instructions
Set out the soy cream to soften.
Set aside cucumbers that have been peeled, seeded, and coarsely minced. Chop the onion finely.
In a small mixing bowl, combine soy cream, onion, and mayonnaise and mix thoroughly.
Toss the cucumber into the mixture until it is equally distributed.
