Servings: Makes about 1/2 cup (1 tbsp = 1 serving)
Ingredients
Packed cilantro leaves and stems (1/2 cup)
Extra-virgin olive oil (1/4 cup)
Lime juice (2 tbsp), freshly squeezed
Zest of lime (1)
Rice vinegar (2 tbsp)
Galic cloves (2), minced
Freshly ground black pepper (1/4 tsp)
Instructions
In a food processor or blender, puree the cilantro, olive oil, lime juice and zest, rice vinegar, garlic, and pepper. Use immediately, or refrigerate in an air-tight container for up to two days.
Substitution Tip: Instead of cilantro, this vinaigrette can be made with an equal amount of parsely for a mor neutrally flavoured vinaigrette.
